Mexican Crema Recipe
1 cup whipping cream
2 Tbs buttermilk
Crema is a delicous condiment or topping for many Mexican dishes. Try using it in place of sour cream on top of tacos or enchiladas. You can also use it to create your own dips and dressings. Crema is buttery rich, slightly tart and easy to make.
Place 1 cup whipping cream in a small saucepan on low. Heat until it is just barely warmed. Do not overheat or the crema won't thicken. Place warm whipping cream and 2 tablespoons buttermilk in a glass container. Cover and let stand at room temperature (about 70°F) for 8 to 24 hours, or until very thick. Stir well, cover and refrigerate for up to 10 days.
Variations:
Add fresh lime juice and grated lime peel for a Lime Crema
Add chopped chipotles for a Smokey Chipotle Crema
