Mexican Tamale Pie Recipe
Filling:
1 lb ground beef
1 cup chopped onion
1 8 oz can spanish-style tomato sauce
1 7 oz jar roasted red peppers, drained and chopped
8 oz canned corn
1 4 oz can chopped olives
2 Tbsp capers
1 tsp packed dark-brown sugar
1 tsp chili powder
1/2 tsp salt
Topping:
3/4 cup yellow cornmeal
1 Tbsp Flour
1 Tbsp Sugar
1/2 tsp baking powder
1/2 tsp salt
1/3 cup milk
1 Large egg
1 Tbsp oil
1 4 oz can green chiles
Accompaniment: salsa, guacamole, sour cream, diced tomatoes
Brown the ground beef and onions in a large skillet over medium high heat. Drain the oil from the pan. Stir in the rest of the ingredients. Add 1/2 cup of water. Bring to a boil, reduce heat, cover and simmer for 10 minutes.
Preheat oven to 350 degrees. Coat a 2-Qt shallow baking dish with non-stick cooking spray. Pour meat filling into dish.
Stir the dry ingredients (cornmeal, flour, sugar, baking powder, salt) in a medium bowl. Whisk milk, egg, and oil in a separate bowl. Stir in the cornmeal mixture and chiles. Pour and spread on top of meat filling.
Bake for approximately 25 minutes or until top is lightly browned. Serve with salsa, sour cream, guacamole and diced tomatoes.
