Easy Mexican Potato Soup Recipe
1 large baking potato, peeled and cubed
2 cups half-and-half
1 cup canned, frozen or fresh corn kernels
1/2 sm red bell pepper, finely diced
2 tsps minced jalapeno, seeds and veins removed
1/2 cup water
1 1/2 tsps ground cumin
1/2 tsp chili powder
salt, to taste
freshly ground pepper, to taste
Tabasco, to taste
Accompaniment: avocado slices, additional corn
Combine all ingredients in a medium saucepan. Bring to a boil and then cover and simmer until potatoes are cooked, about 15-20 minutes. Top with avocado slices and additional corn (if desired) and serve.
